Warwick's Bolognese Recipe
Like many recipes we have tried and tested a few but none have quite hit the mark for us so we made our own. The smoked bacon really makes it, give it ago and let us know what you think.
Ingredients:500g mince beef
100g smoked bacon, finely chopped
2 onions, finely chopped
1 carrot, grated
2-3 sticks celery, finely chopped
2 cloves of garlic, grated
500g passata
200ml milk
200ml red wine
500ml beef stock
1/2 teaspoon dried rosemary
1/2 tablespoon dried oregano
1/2 tablespoon dried basil
1 tablespoon tomato puree
Salt
Pepper
Pinch of sugar
Dash of Lee & Perrins
Chilli flakes
Method:
- Sweat onions, celery, carrot and garlic until soft on a medium heat
- Add smoked bacon and fry for a few minutes
- Turn up the heat and add the mince beef and cook until browned
- Add oregano, rosemary and basil
- Add milk and cook until evaporated
- Add wine and reduce by half
- Add tomato puree, passata and beef stock, Lee & Perrins and chilli flakes
- Mix well and simmer for 1.5-2 hours on a low heat
- Season with salt, pepper and pinch of sugar
- Serve with your favourite spaghetti (also great in a baked potato)
Tip: wine is optional, if not using add an extra 200ml of beef stock in place of the wine.
This bolognese sauce freezes really well, why not make extra and freeze for an easy mid week meal.
